Bacon Ranch Chicken Potato Skillet

Ingredients:

– 4 slices bacon, chopped

– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

– 1 lb baby potatoes, halved or quartered

– 1 packet (1 oz) ranch seasoning mix

– 1 cup chicken broth

– 1 cup heavy cream

– Salt and pepper, to taste

– Fresh parsley, chopped (for garnish)

 

Directions:

 

  1. In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, keeping the bacon grease in the pan.
  2. Add chicken pieces to the skillet and cook until browned and cooked through.
  3. Stir in baby potatoes and ranch seasoning mix, ensuring everything is evenly coated.
  4. Pour in chicken broth and bring to a simmer. Cover and cook for about 10-15 minutes until potatoes are tender.
  5. Stir in heavy cream and cooked bacon. Cook for an additional 5 minutes to allow the sauce to thicken slightly.
