Ingredients:
• 470g boneless, skinless chicken breast (cut into 4 pieces)
• 4 tbsp cream cheese
• 1/4 cup shredded pepper jack cheese
• 2 tbsp chopped green onion
• 8 slices bacon
Directions:
1. Prepare the Chicken: Slice the chicken breasts into four equal-sized pieces.
2. Prepare the Filling: In a bowl, mix together the cream cheese, chopped green onions, and shredded pepper jack cheese.
3. Stuff the Chicken: Place a quarter of the cheese mixture in the center of each chicken slice.
4. Roll Up the Chicken: Roll up the chicken breast along the long side, ensuring the cheese mixture stays in the middle.
5. Wrap with Bacon: Wrap 1-2 slices of bacon around each stuffed chicken breast. Secure with toothpicks if necessary.
6. Bake: Place the bacon-wrapped chicken breasts on a baking sheet and bake at 375°F (190°C) for 30-35 minutes.
7. Broil: After baking, broil the topside for about 7 minutes until the bacon is brown and crisp. Flip each breast and grill for an additional three minutes.
