Butterfinger Peanut Butter Truffles

Ingredients:
– 1 cup creamy peanut butter (not all-natural types)
– 4 tablespoons butter, softened (½ stick)
– 1 teaspoon vanilla extract
– 1 cup powdered sugar
– ¾ cup graham cracker crumbs
– ½ cup crushed Butterfinger bars
– 8 ounces chocolate bark or chocolate chips
– Garnish with additional crushed Butterfingers, holiday sprinkles, or coarse salt

Directions:
1. In a medium bowl, combine the creamy peanut butter and softened butter. Use an electric mixer on medium speed or a stand mixer with the paddle attachment until well mixed.
2. Add the vanilla extract and blend until fully combined.
3. Gradually add the powdered sugar in batches, blending on low speed and scraping down the sides occasionally.
4. Gently stir in the graham cracker crumbs and crushed Butterfingers until evenly distributed.
5. Line a large cookie sheet with parchment paper. Scoop out 1- 1 ½ tablespoons of dough and roll into smooth balls. Place them on the baking sheet.
6. Freeze the balls for about 30 minutes to chill completely.
7. Melt the chocolate in a microwave-safe bowl at 30-second intervals on 50% power, stirring in between. Remove when there are still a few chunks and stir until completely melted.
8. Dip the chilled balls into the melted chocolate, covering them entirely or leaving a bit of the peanut butter mixture showing.
9. Sprinkle with additional crushed Butterfingers, holiday sprinkles, or flaky sea salt for garnish.
10. Allow the chocolate to set completely before enjoying.
