Ingredients:
– 2 cups all-purpose flour
– 1/2 cup white sugar
– 1 tablespoon baking powder
– 1 teaspoon salt
– 1/2 teaspoon baking soda
– 1 1/2 cups shredded Cheddar cheese
– 1 cup plain yogurt
– 2 eggs, beaten
– 1/4 cup butter, melted
Instructions:
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and baking soda until well combined.
- Stir in the shredded Cheddar cheese until evenly distributed throughout the dry ingredients.
- In a separate bowl, combine the plain yogurt, beaten eggs, and melted butter. Mix until smooth and well combined.
- Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined, being careful not to overmix. The batter should be thick and slightly lumpy.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- Serve warm and enjoy your delicious Cheddar Cheese Muffins!
