Cheddar Cheese Muffins

 

Ingredients:

– 2 cups all-purpose flour

– 1/2 cup white sugar

– 1 tablespoon baking powder

– 1 teaspoon salt

– 1/2 teaspoon baking soda

– 1 1/2 cups shredded Cheddar cheese

– 1 cup plain yogurt

– 2 eggs, beaten

– 1/4 cup butter, melted

 

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and baking soda until well combined.
  3. Stir in the shredded Cheddar cheese until evenly distributed throughout the dry ingredients.
  4. In a separate bowl, combine the plain yogurt, beaten eggs, and melted butter. Mix until smooth and well combined.
  5. Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just combined, being careful not to overmix. The batter should be thick and slightly lumpy.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
