Cheesy Hamburger Potato Casserole

Ingredients:

  • 1 pound crumbled ground beef
  • 1 diced yellow onion
  • 3-4 pounds potatoes, peeled and sliced
  • 8 ounces or more shredded Cheddar Cheese
  • 1 can of Cheddar Cheese soup mix
  • 12 ounces of evaporated milk or whole milk
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions:

  1. Preheat your oven to 350°F and spray a 9×13 baking dish with nonstick cooking spray.
  2. In a large skillet, cook the ground beef and onion until the meat is done.
  3. Layer the sliced potatoes at the bottom of the baking dish and sprinkle them with salt and pepper.
  4. Spread approximately 1/3 of the cooked meat mixture evenly over the potatoes, then sprinkle with 1/3 of the shredded cheese. Repeat this process twice more.
  5. The final layer should be the remaining shredded cheese.
  6. In a bowl, combine the Cheddar cheese soup mix, milk, and evaporated milk. Pour this mixture over the top of the potatoes and beef.
  7. Cover the baking pan with aluminum foil and bake for one hour. Remove the foil and bake for an additional 15 minutes to get a golden topping on the cheese.
  8. If the potatoes are thicker, bake for a longer duration.
