Prepare to embark on a delightful journey into the world of Cranberry Pecan Oatmeal Cookies. These cookies are the perfect fusion of chewy oatmeal, tart cranberries, and nutty pecans. With each bite, you’ll experience the harmonious blend of sweet and nutty flavors that make these treats utterly irresistible.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1 cup dried cranberries
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the oats, dried cranberries, and chopped pecans. The dough should be thick and chunky.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. You can use a cookie scoop or your hands to shape the dough.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown and the centers are set. Be careful not to overbake; you want them slightly soft in the middle.
  9. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes. Then, transfer them to a wire rack to cool completely.
  10. Once the cookies are completely cool, store them in an airtight container to keep them fresh.
