Ingredients:
– 9 sheets of graham crackers
– 2 extra-large chocolate bars (like Hershey’s Dark, 4.25 oz each)
– 1/2 cup chocolate chips (or another chocolate bar)
– 20-24 large marshmallows (the rectangular “Stackers” work best)
– 1 large egg
– 1 teaspoon oil
– 3/4 cup milk
– 1 cup + 2 tablespoons all-purpose flour
– 3 tablespoons granulated sugar
– 1/2 teaspoon baking powder
– 1/8 teaspoon salt
– 1 quart frying oil (for deep frying)
– Candy thermometer

1. **Prepare the S’more Base**:
– Line an 8×8-inch pan with cling wrap.
– Layer graham crackers on the bottom, spread melted chocolate chips, layer chocolate bars, add more melted chocolate, top with marshmallows, and finish with another layer of graham crackers.
– Refrigerate until set.
 
2. **Prepare the Batter**:
– Whisk together egg, 1 teaspoon oil, and milk in a bowl.
– In another bowl, mix flour, sugar, baking powder, and salt.
– Combine wet and dry ingredients until smooth.
 
3. **Cut and Prep S’mores**:
– Once the mega s’more is set, cut it into 36 squares.
– Keep them chilled until ready to fry.
 
4. **Frying Time**:
– Heat frying oil to 375°F in a saucepan.
– Dip each s’more square into the batter, ensuring they’re coated.
– Deep fry in batches until golden brown, about 2 minutes.
– Drain on paper towels.
