Homemade Beef Enchiladas

  Ingredients:

Red Enchilada Sauce:
– 2 tablespoons vegetable oil
– 1 tablespoon cornstarch
– 1/4 cup chili powder
– 1/2 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/4 teaspoon ground cumin
– 1/4 teaspoon dried Mexican oregano
– 2 cups vegetable broth

Ground Beef Filling:
– 1 1/2 pounds lean ground beef
– 1 white onion, diced
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 7 ounces diced green chiles, drained

Enchiladas:
– 12 corn tortillas
– 2 tablespoons vegetable oil for frying
– 3 cups shredded Monterey Jack cheese, divided
– 1/4 cup chopped fresh cilantro

  Instructions:

Prepare the Enchilada Sauce:
1. Heat vegetable oil in a medium saucepan over medium heat. Whisk in cornstarch, chili powder, garlic powder, salt, cumin, and oregano.
2. Pour in the vegetable broth, whisking continuously. Simmer until the sauce thickens (approximately 2-3 minutes). Set aside.

Prepare the Ground Beef Filling:
1. In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned and fully cooked (about 7 to 10 minutes). Season with salt and pepper. Drain excess fat.
2. Stir in the drained green chiles. Set aside.

Assemble the Enchiladas:
1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and lightly grease a 9×13-inch baking pan with nonstick cooking spray. Spread 1/2 cup of enchilada sauce on the bottom of the pan.
2. Heat 1 tablespoon of vegetable oil in a small skillet over medium heat. Briefly fry each tortilla until softened (do not make them crispy).
3. Dip each tortilla into the enchilada sauce to coat, then place on a plate. Fill with a portion of the ground beef filling and a generous amount of shredded cheese. Roll up and place seam-side down in the prepared baking pan.
4. Drizzle the remaining enchilada sauce over the assembled enchiladas. Top with the remaining shredded cheese.
5. Bake, uncovered, in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
