Ingredients:
• 2 pounds colossal shrimp
• 1 can fire-roasted tomatoes
• 1 can coconut milk
• 1/2 cup grated Parmesan cheese
• 1/2 cup shredded Mozzarella cheese
• Your favorite seasonings
• Shrimp seasoning: jerk seasoning, sofrito, diced garlic
• Fettuccine pasta
• Chicken stock
Directions:
1. Prepare the shrimp: Season the colossal shrimp with jerk seasoning, sofrito, and diced garlic. Sauté until cooked through. Set aside.
2. In a large skillet, sauté peppers, diced garlic, and jerk seasoning until fragrant.
3. Add sofrito and fire-roasted tomatoes to the skillet. Stir in coconut milk, juices from the cooked shrimp, and chicken stock. Bring the mixture to a boil.
4. Cook the fettuccine pasta according to package instructions. Drain and set aside.
5. Add the cooked pasta to the skillet with the sauce. Stir to combine.
6. Sprinkle Parmesan and Mozzarella cheese over the pasta. Stir until the cheese is melted and well incorporated into the sauce.
7. Layer the cooked shrimp over the pasta.
