Bite-sized desserts have a unique charm that captures the hearts and taste buds of many. These mini shortcake cups offer a burst of flavor in every bite, making them perfect for various occasions.

Ingredients

Scale

For the Shortcake Cups:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

For the Filling:

  • Fresh berries of your choice (e.g., strawberries, raspberries, blueberries)
  • Whipped cream

Instructions

1. Making the Shortcake Cups:

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  • Add the cold, diced butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the mixture until it resembles coarse crumbs.
  • In a separate bowl, mix the milk and vanilla extract.
  • Pour the milk mixture into the dry ingredients and stir until just combined. Be careful not to overmix; the dough should be crumbly.
  • Take small portions of the dough and press them into the cups of a mini muffin tin, shaping them into small cups.
  • Bake in the preheated oven for about 12-15 minutes or until the cups are lightly golden brown.
  • Remove from the oven and let them cool completely.

2. Preparing the Berries:

  • Wash and prepare the fresh berries of your choice. You can slice strawberries, for example, and have raspberries and blueberries ready.

3. Assembling Mini Shortcake Cups:

  • Once the shortcake cups are cool, carefully remove them from the muffin tin.
  • Fill each cup with a spoonful of whipped cream.
  • Top the whipped cream with a mixture of fresh berries.

4. Serving:

  • Arrange the mini shortcake cups on a serving platter or plate. You can garnish with extra berries, a drizzle of honey, or a dusting of powdered sugar for added elegance.
  • Serve your mini shortcake cups and enjoy the delightful, bite-sized dessert.
