Orange Cranberry Bundt Cake

   Ingredients:

For the Cake:
– 2 ¼ cups all-purpose flour
– ¼ cup cornstarch
– ½ teaspoon salt
– 2 teaspoons baking powder
– ½ teaspoon baking soda
– ¾ cup unsalted butter, softened at room temperature
– 1 and 2/3 cups sugar
– 4 large eggs, at room temperature
– 2 teaspoons vanilla extract
– 2 ½ tablespoons orange zest
– ¼ cup fresh orange juice
– 1 cup sour cream
– 3 cups fresh cranberries (if using frozen, do not thaw)

For the Frosting:
– ¼ cup unsalted butter, at room temperature
– 4 oz. cream cheese (brick-style)
– 1 ½ cups powdered sugar
– 1 teaspoon vanilla extract
– Dash of salt
– 1–2 tablespoons milk, or more if needed

For Garnish:
– 1 cup sparkling cranberries
– 1 teaspoon orange zest

   Instructions:

1. Preheat the oven to 350°F and position the rack in the lower third of the oven.
2. In a bowl, sift together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, cream the softened butter for 1 minute. Add sugar and continue creaming for another 4-5 minutes.
4. Add the eggs and vanilla, mixing until combined. Incorporate the orange zest and juice.
5. Gradually add half of the flour mixture, mixing well. Blend in the sour cream, then fold in the remaining flour mixture.
6. Gently fold in the cranberries with a rubber spatula.
7. Generously grease a 9-inch (10-12 cups volume) fluted Bundt pan with baking spray.
8. Spread the batter into the prepared pan evenly.
9. Bake for 45-60 minutes, or until a toothpick inserted in the cake comes out clean with a few moist crumbs attached. Baking time may vary based on the pan used.
10. Cool the cake in the pan for 10 minutes, then invert it onto a rack to cool completely.

For the Cream Cheese Frosting:

1. Beat together the softened butter, cream cheese, vanilla, and a dash of salt.
2. Gradually mix in the powdered sugar and 1-2 tablespoons of milk. Adjust consistency by adding more milk if too thick or more powdered sugar if too thin.
3. Spread the frosting onto the cooled cake using a spoon.

Garnish with sparkling or dried cranberries and a sprinkle of orange zest.
