Ingredients

– 1 tablespoon olive oil
– 2 pounds lean ground beef
– Salt and pepper to taste
– 1 cup onion, diced (1 small onion, yellow or white)
– 1 large green bell pepper, cleaned and chopped
– 1 large red bell pepper, cleaned and chopped
– 1/4 cup brown sugar
– 2 teaspoons Italian seasoning
– 2 cloves garlic, minced
– 15-ounce can tomato sauce
– 28-ounce can diced tomatoes, undrained
– 2 cups beef broth
– 2 cups cooked rice (white or brown)


Instructions

1. Heat olive oil in a dutch oven or large pot.

2. Add the lean ground beef, season with salt and pepper, and cook until it’s almost done.

3. Stir in the diced onion and cook until it becomes soft.

4. Add the chopped green and red bell peppers and cook over medium-high heat until they also become soft, which should take about 5-8 minutes.

5. Stir in the brown sugar, Italian seasoning, and minced garlic. Continue stirring and cook for 1 more minute.

6. Add the tomato sauce, diced tomatoes (undrained), and beef broth. Stir until the mixture is well combined.

7. Bring the mixture to a boil.

8. Reduce the heat to simmer, cover the pot, and let it cook for 45-60 minutes. This allows the flavors to blend well and the soup to heat through.

9. Stir in the cooked rice.

10. Serve your delicious Stuffed Pepper Soup immediately.
