Sushi cake

Ingredients:

For the Rice Layers:

  • 2 cups sushi rice
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the Filling:

  • 1 cup imitation crab, shredded
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 1/2 cup cream cheese, softened
  • 1 tablespoon soy sauce
  • Sesame seeds for garnish

For the Spicy Mayo:

  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce

For Garnish:

  • Nori sheets (seaweed), cut into thin strips
  • Pickled ginger
  • Soy sauce for serving

Instructions:

1. Prepare the Rice Layers:

  • Rinse sushi rice under cold water until the water runs clear.
  • Cook the rice according to package instructions.
  • In a small saucepan, mix rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.
  • Transfer cooked rice to a large bowl and gently fold in the vinegar mixture. Let it cool.

2. Assemble the Layers:

  • Line a round cake pan with plastic wrap.
  • Press a layer of sushi rice into the bottom of the pan, creating an even base.
  • Spread a layer of softened cream cheese over the rice.
  • Add a layer of shredded imitation crab, julienned cucumber, and sliced avocado.

3. Repeat the Layers:

  • Repeat the process with another layer of rice, cream cheese, and the seafood and vegetable filling until you reach the top of the cake pan.

4. Make Spicy Mayo:

  • In a small bowl, mix mayonnaise and Sriracha sauce to create the spicy mayo.

5. Finish and Garnish:

  • Invert the sushi cake onto a serving plate.
  • Spread the spicy mayo over the top.
  • Garnish with nori strips, sesame seeds, and pickled ginger.
  • Serve with soy sauce on the side.
