Ingredients:
For the Rice Layers:
- 2 cups sushi rice
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
For the Filling:
- 1 cup imitation crab, shredded
- 1 cucumber, julienned
- 1 avocado, sliced
- 1/2 cup cream cheese, softened
- 1 tablespoon soy sauce
- Sesame seeds for garnish
For the Spicy Mayo:
- 1/4 cup mayonnaise
- 1 tablespoon Sriracha sauce
For Garnish:
- Nori sheets (seaweed), cut into thin strips
- Pickled ginger
- Soy sauce for serving
Instructions:
1. Prepare the Rice Layers:
- Rinse sushi rice under cold water until the water runs clear.
- Cook the rice according to package instructions.
- In a small saucepan, mix rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves.
- Transfer cooked rice to a large bowl and gently fold in the vinegar mixture. Let it cool.
2. Assemble the Layers:
- Line a round cake pan with plastic wrap.
- Press a layer of sushi rice into the bottom of the pan, creating an even base.
- Spread a layer of softened cream cheese over the rice.
- Add a layer of shredded imitation crab, julienned cucumber, and sliced avocado.
3. Repeat the Layers:
- Repeat the process with another layer of rice, cream cheese, and the seafood and vegetable filling until you reach the top of the cake pan.
4. Make Spicy Mayo:
- In a small bowl, mix mayonnaise and Sriracha sauce to create the spicy mayo.
5. Finish and Garnish:
- Invert the sushi cake onto a serving plate.
- Spread the spicy mayo over the top.
- Garnish with nori strips, sesame seeds, and pickled ginger.
- Serve with soy sauce on the side.
