Ingredients:
**Taco Meat:**
– 1 pound ground beef
– 3 tablespoons of homemade taco seasoning or 1 package of store-bought seasoning
**Cheese Sauce:**
– 1 cup whole milk, divided
– 4 teaspoons flour
– ½ teaspoon salt
– ⅔ cup shredded cheese
– ¼ teaspoon ground black pepper
**Lasagna:**
– 12 soft 6-inch tortillas, with 3 of them cut into fourths
– 1 cup salsa, divided
– 3 cups Mexican cheese blend, divided
– 1 cup shredded lettuce
– 1 medium tomato, diced
– 1 small jalapeno, diced
– 1 cup sour cream
Instructions:
1. Preheat your oven to 400°F (200°C).
**For the Taco Meat:**
2. In a large skillet, brown the ground beef over medium heat until it’s no longer pink. Add the taco seasoning and stir to combine. Set it aside.
**For the Cheese Sauce:**
3. In a medium saucepan, whisk together 1/4 cup of milk and the flour until it forms a smooth paste.
4. Pour in the remaining milk and add the salt. Bring the mixture to a boil over medium heat while stirring frequently.
5. Reduce the heat to low and simmer for 2 minutes, stirring constantly. The mixture will start to thicken.
6. Remove the saucepan from the heat and stir in the shredded cheese and ground black pepper until the cheese is fully melted. Set it aside.
**Assembling the Taco Lasagna:**
7. Prepare a 9×13-inch baking dish by coating it with cooking spray.
8. Create an even layer of tortillas in the dish by placing two whole tortillas in the pan, covering as much of the pan as possible. Use the smaller cut pieces of tortilla to fill in any empty spaces.
9. Top this layer with half of the taco meat, half of the cheese sauce, and half of the salsa.
10. Add another even layer of tortillas and top it with 2 cups of shredded Mexican cheese.
11. Create another even layer of tortillas, top it with the remaining taco meat and cheese sauce.
12. Add a final even layer of tortillas and top it with the remaining cheese.
13. Cover the baking dish with foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes.
14. Finish by topping the Taco Lasagna with shredded lettuce, diced tomatoes, jalapenos, and sour cream. Serve it immediately, and enjoy the delicious fusion of flavors and textures in every bite!
