Ingredients:
For the Cake:
- 5 eggs
- 150 g powdered sugar
- 135 g wheat flour
- 15 g unsweetened cocoa powder
For the Ganache:
- 20 cl liquid cream
- 200 grams dark chocolate
For the Glaze:
- 8 cl peanut oil
- 150 grams dark chocolate
For Greasing the Forms:
- 10 grams soft butter
- 10 g wheat flour
Yields: Enough for 6 people
Instructions:
For the Cake:
- Preheat the oven to 200°C (392°F). Grease the cake pan with soft butter and dust with flour.
- Mix the flour and cocoa powder together.
- In a blender, whisk 3 eggs and sugar until the mixture is very foamy and triples in volume.
- Gently fold in the flour and cocoa powder mixture using a spatula until well combined.
- Pour the cake batter into the prepared pan and bake at 200°C for 20 minutes. Allow it to cool completely.
For the Ganache:
- Place chocolate chips in a salad bowl.
- In a saucepan, heat the cream until it boils, then pour half of it over the chocolate chips.
- Once the chocolate is melted, gently stir from the middle of the bowl towards the edges.
- Add the remaining cream and continue stirring until smooth. Allow it to cool.
For the Glaze:
- Melt butter and chocolate in a double boiler.
To Assemble:
- Once the cake is completely cooled, cut it into three slices. Place a layer of ganache between each cake slice.
- Apply a layer of ganache on top, and then pour the warm glaze over it, covering the entire cake.
- Leave the cake in a cool place and always keep spare parts.
