  Ingredients:

Bang Bang Sauce:

– 1 Batch Asian Cucumber Salad
– 3 cups cooked brown rice
– 1 large head broccoli, chopped into florets
– 1 large ripe avocado, sliced

  Instructions:

1. Prepare the Bang Bang Sauce: Combine Greek yogurt or mayonnaise, sweet chili sauce, and sriracha in a bowl. Stir well to combine, then refrigerate until use.

2. Asian Cucumber Salad: Prepare the cucumber salad by mixing all ingredients in a small bowl. Let it sit for at least 15 minutes, ideally an hour for better flavor infusion.

3. Cook Brown Rice: Follow package instructions to cook brown rice. Adjust the quantity based on the number of servings needed.

4. Cook Broccoli: Steam, sauté, or roast the broccoli according to your preference. Sauté it in 1 teaspoon of avocado oil and 1/4 cup of water in a nonstick skillet.

5. Prepare the Salmon: In a small bowl, mix coconut aminos (or soy sauce + pure maple syrup), rice vinegar, minced garlic, sriracha, and sesame oil.

6. Cut the salmon fillet into bite-sized cubes. Heat 1 tablespoon of avocado oil in a skillet over medium-high heat. Place the salmon chunks skin side down (if skin is on). Cook for 2-3 minutes until skin is golden-brown, then flip and cook for another 1-2 minutes. Pour the prepared sauce over the salmon. It will boil, which is normal. Adjust heat if needed. Cook for 4-5 minutes until salmon is fully glazed and reaches an internal temperature of 145°F.

7. Assemble Bowls: Divide cooked rice into two large bowls. Add cucumber salad, sautéed broccoli, avocado slices, and cooked salmon bites. Drizzle with Bang Bang sauce. Optionally, add coconut aminos or teriyaki sauce. Garnish with chopped green onions and sesame seeds if desired.
