OLD FASHIONED ORANGE CANDY

Ingredients:

  • 1 can (6 ounces) fruit pectin
  • 3/4 cup water
  • 1/2 teaspoon baking soda
  • 1-1/4 cups sugar, divided
  • 1 cup light corn syrup
  • 2 tsp orange extract
  • Five drops each: red and yellow liquid food coloring

Instructions:

  1. Spray a 9-by-5-inch loaf pan with cooking spray; set aside.
  2. In a medium saucepan, combine pectin, water, and baking soda (the mixture may foam).
  3. In a large saucepan, combine 1 cup sugar and corn syrup. Cook over high heat for four minutes, or until the pectin mixture runs out of froth and the sugar mixture comes to a full boil (boiling that does not stop bubbling while stirring), stirring often in both saucepans.
  4. Gradually add the pectin mixture to the boiling sugar mixture, stirring constantly. Cook for about a minute, stirring.
  5. Remove it from the heat. Add food coloring to the extract.
  6. Pour the mixture immediately into the prepared pan. Let it stand at room temperature for three hours or overnight until the lollipop cools and hardens.
  7. Sprinkle 1 cup of the remaining sugar on a large piece of wax paper.
  8. Flip the candy onto the wax paper. Cut the fondant into 3/4-inch cubes, stopping occasionally to soak the knife in hot water.
  9. Toss the sugar and fudge until they are evenly coated.
  10. Apply the coating to the wire rack.
  11. Let it sit overnight at room temperature.
  12. Store in an airtight container at room temperature.

Enjoy!
