Triple chocolate mousse cake

Ingredients:

For the Cake:

  • 5 eggs
  • 150 g powdered sugar
  • 135 g wheat flour
  • 15 g unsweetened cocoa powder

For the Ganache:

  • 20 cl liquid cream
  • 200 grams dark chocolate

For the Glaze:

  • 8 cl peanut oil
  • 150 grams dark chocolate

For Greasing the Forms:

  • 10 grams soft butter
  • 10 g wheat flour

Yields: Enough for 6 people

Instructions:

For the Cake:

  1. Preheat the oven to 200°C (392°F). Grease the cake pan with soft butter and dust with flour.
  2. Mix the flour and cocoa powder together.
  3. In a blender, whisk 3 eggs and sugar until the mixture is very foamy and triples in volume.
  4. Gently fold in the flour and cocoa powder mixture using a spatula until well combined.
  5. Pour the cake batter into the prepared pan and bake at 200°C for 20 minutes. Allow it to cool completely.

For the Ganache:

  1. Place chocolate chips in a salad bowl.
  2. In a saucepan, heat the cream until it boils, then pour half of it over the chocolate chips.
  3. Once the chocolate is melted, gently stir from the middle of the bowl towards the edges.
  4. Add the remaining cream and continue stirring until smooth. Allow it to cool.

For the Glaze:

  1. Melt butter and chocolate in a double boiler.

To Assemble:

  1. Once the cake is completely cooled, cut it into three slices. Place a layer of ganache between each cake slice.
  2. Apply a layer of ganache on top, and then pour the warm glaze over it, covering the entire cake.
  3. Leave the cake in a cool place and always keep spare parts.
  4. Enjoy!
