  Ingredients:

*For the muffins:*
– 1 cup (120g) all-purpose flour
– 1 ½ teaspoons baking powder
– A pinch of salt
– 1 large egg
– ½ cup (100g) granulated sugar
– ½ cup (120g) full-fat plain yogurt
– ¼ cup (60 ml) neutral-tasting vegetable oil (e.g., canola oil)
– 1 teaspoon vanilla extract
– 1 ½ cups (225g) fresh blackberries (frozen work too) + extra for decoration
– ¼ cup (50g) honey
– Zest of ½ lemon
– 1 teaspoon cornstarch

  Instructions:

1. Line a muffin pan with paper liners and set it aside.

2. In a large bowl, combine the all-purpose flour, baking powder, and a pinch of salt. Set this dry mixture aside.

3. In a medium bowl, whisk the egg and granulated sugar together until well combined. Add the yogurt, vegetable oil (or melted and slightly cooled butter), and vanilla extract.

4. Pour the wet ingredients into the dry ingredients and whisk until the mixture is thoroughly combined.
